This recipe yields 2 loaves. It is baked with gluten free flour.

Cook time: 1 1/2 hours

Ingredients:
1 cup butter
2 cups sugar
5 eggs
1/4 tsp. salt
2 tsp. soda
4 cups flour (gluten-free)
6 very ripe bananas
1 cup chopped almonds

Preparation:

Preheat oven to 325° and grease 2 loaf pans. In a smaller bowl, cream together butter and sugar. Beat in eggs, one at a time. In a larger bowl, sift dry ingredients together; add to creamed mixture. Stir in bananas and chopped almonds.

Pour banana nut bread batter into 2 well greased loaf pans, sprinkle cinnamon on the tops, then bake at 325° for 1 1/2 hours.
